SALVAJE 2021, THE ORGANIC AND NATURAL WINE BY EMILIANA IS HERE TO SURPRISE US
The enthusiasm for this cool-climate red wine from the Casablanca Valley, with a solid Syrah base and a touch of Roussane, can be attributed to a vintage that Noelia Orts, winemaker at Emiliana, has described as “extraordinary.”
“This was a slow ripening process, combined with fresh temperatures. These conditions have helped us to have well-balanced fruits with good acidity, fruity aromas, and soft tannins. All well-balanced due to the climate conditions,” says Orts.
One of the most outstanding features of Salvaje is that the wine has no added sulphites. In winemaking, this element acts as a preservative, and its absence distinguishes it from the rest of the wines as it is made in a natural way.
“Salvaje is a modest wine but, at the same time, very honest: it perfectly reflects its place of origin. When I say modest, it just means that it is such because it has no interventions. It is only fermented organic grapes and nothing else. It has no wood and no aging, and the result is a very fruity wine”.
